Heat 2 tspn of oil in a medium pan and then add the carrots, celery, onion & thyme, cook for 5 minutes until gently softened but not coloured.
Add stock, tinned tomatoes and bring to the boil, then simmer for 10 minutes.
Add the quinoa & rice, diced courgette and kale and return to a boil, then reduce the heat and simmer for 2-3 minutes until the vegetables are just tender.
Season with sea salt, freshly ground black pepper and serve with paremsan shavings
